I like my t-shirts to be bigger than I really need for comfort. Trouble is when I get a XX/XXX/XXXX t-shirt the maker thinks the buyer must be 6-9 or 7-2 in height. Those shirts go to 2 inches above my knee as I don't like to tuck them in. Any help...short of cutting the big ones down and sewing them up.

I’m in Canada and this is a Canadian company so probably not too helpful. However I’m sure you have tons of local options for the brand of shirt itself. Just look for Gildan. I prefer the heavy duty cotton myself.

Almost all T shirts shrink over multiple washes. You can accelerate things by laundering them in very hot water (or even pre-soaking them in water you have just brought to a boil), and then drying them starting with high heat. Do the first pass, then try it on and see how much it has shrunk and how well it fits you. If you need more shrinkage, try a second pass. Once you are satisfied, do cold or warm washes only afterwards, so that they do not shrink any further. I have had success with this method for trousers and shirts, as well as other articles of clothing.

I clicked on this because I thought it was about x rated t-shirts. Now that I'm here, I also like Gildan. I can get them for less that $5 each, maybe more now because I haven't bought any in several years. The best, with the nicest cotton material, are LL Bean, and they just started carrying them in extra large sizes.
