Putting a wet shirt in the dryer on high heat shrinks it, so why doesn't ironing a wet shirt also shrink it?

You are ironing a damp shirt, hopefully, and not a wet shirt. That is a significant difference. Then as Taxler says, you should be stretching the fabric as you iron it, particularly the seems. If you are not careful your shirts can shrink when you iron them, but not to the extent if you over heat them in a dryer.

Answer:
You're stretching, pulling, and pushing the fabric while you iron.

But I thought Senor Kabbaz himself says to only stretch the parts that scrunch up? Or is it simply by rubbing the iron along the fabric that is enough of a stretching?
Depends upon the iron. In our case, simply running 7 pounds of cast iron across the fabric does a darn good stretch job.
