How wide are your cuffs on your trousers?

I want to tell the seamstress a width to make sure they don't make them too wide or narrow.

Hmmmmm....thinking I need to try 1.75" now. My tailor always does 1.5", but gonna try a larger cuff.

Yes. If unfinished isn't an option, buy the pants longer (try to get them in the longest length possible) and then take them to your tailor. I always wash mine first to control any possible shrinkage after the cuffs are in place.
