I have a closet full of Ascot Chang shirts made 10-20 years ago, with fraying collars. Nothing wrong with the cuffs. I’m asking your opinion about just replacing the collar and leave the cuffs the original check or stripes. In the past, I’ve always replaced both even though the cuffs were fine

I don't see anything wrong with that.
I'd say it's kosher. While white collars and cuffs are often paired, I've seen plenty of shirts with just the collar.

If that's your preference, why not?

Back in my shirtmaker days, I commonly would have many of the shirts for which I wished barrel cuffs made with a contrasting collar, but cuffs matching the body. Why? I just thought they looked better that way as barrel cuffs. But I see no reason you shouldn't treat French/double cuffs the same, if it's what you want.

Just a white collar is perfectly fine. I have usually found both my collars and cuffs to wear out at the same rate. I think it makes sense to replace both the collar and the cuffs because the cuffs will likely wear out not so long after the collar. But try it and see.

And, that's pretty much what Mr. Chang said about my question. I took 6 shirts in with frayed collars. Interestingly, 3 of the colors had virtually perfect matches in the current book and he will replace them with the original. The other ones will get white collars and cuffs because, while I didn't see it at home, the French cuffs are starting to wear at the fold.
