cuffs and button holes

After many years of dressing poorly in the "Banana Republic style" I'm starting to return to my more traditional ways of the past. I'm not ready to start wearing pleated pants again and would like to know the proper way to finish a plain front suit pant? If I go with cuffs, what is the best width of the cuff? Also, I've noticed that some suits have the stitching on the cuffs to simulate button holes. If the sleeves need to be shortened, will the tailor recreate this stiching? Personally, I'd prefer not to have the faux stitching at all.
