Advice for my first bespoke shirts by Paris

Gentlemen,
I will be in NY next weekend for a few hours between connecting trains and was planning to go to Geneva Shirtmakers for my first bespoke shirt purchase. I called them up and was told that the minimum order was four. I have decide on the following four styles and colors:
1. White cutaway collar, french placket, no pocket, rounded french cuffs
2. Pink large gingham, semi-spread collar, french placket, no pocket,turned-back cuffs w/ 3 buttons.
3. solid Yellow (or some shade of), semi-spread collar or straight with rounded tips (not the old fashioned kind, but more subtle), french placket, no pocket,turned-back cuffs w/ 3 buttons.
4. Fuschia, semi-spread collar or straight with rounded tips, french placket, no pocket,turned-back cuffs w/ 3 buttons.

My question is in regards to fabric. What year-round fabric would be best for these? Simple poplin? How about a twill? Not looking for anything too expensive like sea-island. Also, any other details I should take into consideration? As always, your expert advice is appreciated.

BTW, Can anyone recommend a really good Jewish deli around there or near Penn train station?
