I am familiar with the red plaid hunting jacket, a sort of New England and Washington state classic, but what is it's right name and what is the recognized classic brand?

No one I know has the answer for this, but a search of the web basically suggests the name of this coat is a Mackinaw Cruiser and one of the ancient brands of this is Filson.

So someone educate me, what is the classic brand of the plaid hunting coat that I'd see in dozens of photos in the 1930s, 40s and 50s.

L. L. Bean's Maine guide wool parka or the Filson . Yes, Woolrich does make a jacket like that but they are currently sold out. Unfortunately, both of these are far too heavy to wear in our local mild climate but they sure look sharp! I settled for a Woolrich shirt jac that also comes in two different red/black plaids. If you're not talking about sub freezing temperatures you might just take a good look at.
 
You can compare the photos you see to the Filson. The Filson coat is a classic but I see it as a matter of geography in the old days. if you are from the west you would favor Filson. I believe the US Park Rangers wore Filson gear. If your from the East buffalo plaids from Woolrich and Johnson Woolen Mills would be the default.
I am sure an ebay search would turn up a bunch of defunct brands all using US sourced wool.

I would go with Woorich for the classic pattern, color you are looking for. Johnson Woolen mills and BTW Bemidji Woolen Mills in Minn are two of the biggest of wool clothing . Not only do they do for most places but do companies like acorn slippers and on and on

I say woorich my friend, cause I know with the Hudson Bay coats Woorich has the color rights to like 3-5 of the hudson bay colors. This tem is very well controlled out of Canada. The woools come from all over, and for some reaon the blanket has to be made in England.

So for your best route, would go with the woolrich.
I know woorich now has hudson bay in their web site, and can seel them because of the colors rights.

Also, if you look for hudson bay you bring up Bemidji woolen and woorich.

Woolrich was making wool durin the civil war. So they have been there.

Johnson woolen makes for many many places as well

Woolrich's version looks like , but from the information on the website you'll probably have to back order it. If you need one now, I'd head for Filson.
 
I've seen Woolrich's, LL Bean's, and Filson's. IMO Filson has the best quality, but it comes with a price, as expected. I heard that Patagonia was offering a red plaid jacket this season...not sure however. Lands End offers one but I've seen it...not the same quality as a Woolrich or Filson.
 
This might not be the right place to say so, but if you're a big fella I'm looking to sell a couple of large Filson Double Mackinaws (sizes 44 and 46) in the red/black plaid. DM me if either is your size and I can send you pics and discuss a price.
 
LLBean has made one from the start, I believe, but Mr. Bean indicated in the catalog that it was a "standard item" of hunting clothing even in 1912
Bean never really made much of anything of its own other than shoes (and at times, decoys and flies). In the olden days (i.e., through the 1970s) they had a habit of sourcing another make, adding their label, and the calling it "Bean's Original ......" I suspected, before the rush to China, that Bean sourced its Maine Guide Shirt and its Guide Wool Parka from Woolrich or Johnson.
